Notaries are trusted by the state to make the determination that you are who you say you are. When an important document gets recorded, the state official will believe that the signer is who they are because the document is notarized. A notary will get a feel for the situation. If it seems questionable, the notary should not and will not notarize the document. A notary cannot notarize a document that was signed under duress. NO! Once a notary has completed the notarization it can't be edited. It is best to make sure all of the necessary is on the document prior to calling a mobile notary.
As long as it is an acknowledgement and not a jurat, Yes. A jurat involves taking an oath/affirmation and the notary must witness the signing.
